Go-to chicken or pasta dishes become old hat, but an easy way to shake things up in the kitchen is to cook outside of your comfort zone. Allow other cuisines to enter the rotation. Rinku Bhattacharya, a finance professional, mother, wife, blogger and cookbook author, can help make that happen. Inspired by the stock at Westchester's farmers' markets and her home garden in Valhalla where she grows curry, sage, greens, berries, cherries, tomatoes, okra and more, her recipes are blooming with traditional Indian flavors, but with a touch of the Hudson Valley in each dish.

Bhattacharya's mealtime mentality is approachable, sustainable, and designed to satisfy the various mouths she has to feed, which includes a child with food allergies and a vegetarian husband.

Miss Masala

Cooking and blogging are only a portion of her workload, so she's no stranger to the hurdles most time-strapped home chefs find themselves up against during a busy week. Inside you'll find tons of party pleasers like crispy fried kale and potato patties or warm red cabbage slaw with pecans, as well as some break-the-mold dinner options like a slow-roasted chicken that's rubbed with cilantro, parsley, chilies, ginger, cumin and lime, and basted with ghee. Toss the tomatoes with the garlic, olive oil, and red pepper flakes, if using, and set aside for 10 minutes.

Cook the tomatoes lightly on a grill for 3 to 4 minutes skin side down, till the skin of the tomato is barely bruised and lightly charred reserve any leftover oil in bowl. Alternately, the tomatoes can be broiled for 6 to 7 minutes with the skin side up. Place the tomatoes in a mixing bowl as they are done and pour any remaining oil marinade into the bowl over the tomatoes. Made with a rotisserie chicken and canned coconut milk, this easy version of Mulligatawny soup is a one-pot supper that you can have on the table in 45 minutes.

Chicken Curry. You can have it on the table in 30 minutes — or in the time it takes to make some basmati rice — and the cooking method ensures that the chicken comes out tender every time. Crispy Tandoori Chicken. This chicken tandoori is deliciously spiced with super-crispy skin, and the mango chutney served alongside adds fruity, tangy flavor. Real Life.

Spices & Seasons: A how-to for Indian food at home

Mar 08, Eileen rated it liked it Shelves: cookbook. I just recieved this book today from Amazon. Not only did I buy this book to support a fellow Houstonion but I also was looking for an Indian cookbook that had recipes that I could make easily at home. This is not an easy recipe for a busy person.. I also was dissapointed that in one recipe it required fresh pieces for grinding the spices at home, instead of just something you can buy at Indian grocery like "curry" or "garam masala" already prepared I have rated 3 stars because of the deceptive title, not that I have tried the recipes yet.

Will update when I do Saag Paneer but with store-bought paneer. Not to mention, I bought this by mistake thinking it was the book I wanted, the other one had recipes, and had better reviews as to the ease and authenticity of the Indian recipes.
